Deconstructionism and Food
Industry
When we talk about ‘Deconstructionism’ it is a philosophical term and
Prof. Jacques Derrida has talked about deconstructionism. This
philosophy leaves impact on each every part of our life.
Indian Companies Act of 1956 brought Food and tourism Industry in
country. The India Tourism Development Corporation (ITDC) came in
1966. In 1967 Indian government separated Ministry of Tourism and
Civil Aviation from Ministry of Transport and Shipping, Which started
growing only after post 1970s. Rai Bahadur M. S. Oberoi, Chairman of
East India Hotels Ltd. Constructed New Delhi's first modern
multi-story Oberoi hotel. It initiated the trend of franchising and it
followed by another giant Taj Mahal Hotels in Bombay.
Hotel industry was expanded by growth of city and industrialization;
individual entrepreneurs entered in business of hotels during the late
1970s. Secondary cities and resorts was the trend of that time. Asian
Games of 1982 gave a tremendous boost to hotel industry. It took 1986
for government to recognize the industry potential. Entry level hotel
chain was developed in 1998. This new millennium made hotel industry
more mature. Today we have entry level, mid level and star hotels.
The entry level and mid level hotels are growing at tremendously in
secondary cities and tourists places. Heritage hotels are a new
concept which is picked up. This industry is growing by 25% p.a. and
expected to be doubled by the end of 2016. These are the figures are
printed in industry magazines but when we see the ground reality and
taxes imposed on them, we get surprised by growing food joints in
city. They are not the part of established hotel industry. Most of the
time they do not fall in tax bracket or they do not pay taxes.
Street food is the new flourishing industry in the country. It is not
organized and it scattered all over the country. I will not talk
about hygiene as most of the bigger names in food industry use
artificial flavors and harmful chemicals as preservatives. This
industry reminds me one of the principles of Deconstructionism. The
superior becomes inferior and inferior becomes superior. The
yesterday’s consumer class was inferior it has no choice but to
venture in hotel and to pay heavy billed amount. Today we find most of
them are comfortable with street food. This industry has not come
under the government scanner. The earlier superior class has become
more helpless.
Mobile telephony and smart phones are breaking the backbone of hotel
industry. Poppadum meal is a new concept, where you as a working
professional and a food enthusiast is the requirement. Make a meal for
10 to 15 strangers. Make ethnic food, click beautiful photographs and
upload it on facebook, mealtango or trekarious web portals. Use mobile
apps like tiny owl for further communication and advertising. This is
a successful business mantra. You do not need to invest a lot and you
get handsome return out of it. These meals are charged anything
between 1,000rs to 1,800rs per person. This activity if you do it once
a week it earns you a good amount and balances your worries. Apart
from your daily routine this is an home adventure for you and you get
thrilled to see the happy faces of strangers who become your brand
ambassadors.
I find this ground breaking ‘deconstructionist concept of hotel’. You
do not need a commercial place, license, chef, captain and decor. You
feel like home with no body to bother you.
